Aroma Multiline Automated Pre-Dough System

The Aroma Multiline is a standalone automated pre-dough system for swelling, scalding, cooking and AromaStück® production. The system is available with a capacity of 500 or 1000 kg at a TA of at least 300, depending on raw materials and processes. A special feature of the AromaStück® Multiline is the optimised process control for constant pre-dough quality. The system consists of a three-walled stainless steel fermenter with water bath technology. The anchor agitator with special agitator and wall scraper is powerfully dimensioned for pre-dough production and enables optimal mixing of all ingredients. The dosing pump is dry-running safe and provided in a robust design with pipe distribution for dosing out and cleaning. The PLC control ensures correct compliance with fermentation times and temperatures as well as dosing quantity control. The system offers flexible recipe control for swelling, scalding, cooking and AromaStück®, with variable fermentation times and flexible stirring intervals. The unit is hygiene- and cleaning-friendly, individually configurable and has a modular structure.
